Winter Salad with Granny Smith Apples and Blackberries

Crisp slices of Granny Smith apples and blackberries give this salad lots of healthy flavor. For the party I added Clementine oranges, too.

I made this for dinner tonight to test for a Christmas party this weekend.  Scott really liked it, so I think it’s a go.  I will take a picture and post it this weekend. 

I do not have measurements for the salad ingredients – but to give you a starting base, I made enough for two people and only used one apple and about 1 cup of berries.   I probably used only one-third of the dressing – whenever I make salad, I always make a little extra dressing so I have some on hand in the refrigerator for quick lunches.  

Ingredients:

Mixed greens – I used Spring Mix, Spinach and Arugula

Granny Smith Apple – quartered, cored and sliced

Blackberries – washed and drained

Feta Cheese  – crumbled (goat cheese would be delicious too)

Red Onion – very thinly sliced – not a lot, just enough for some flavor and an extra zap of color

Honey Roasted Almonds

Dressing:

1 Teaspoon Dijon Mustard

2 Teaspoons Balsamic Vinegar

2 Tablespoons Fresh Squeezed Orange Juice (or not from concentrate)

1 Teaspoon Sugar

1 Teaspoon Lemon Pepper Blend

Pinch of Garlic Powder

6 Tablespoons Extra Virgin Olive Oil

Stir all the ingredients except the olive oil until well mixed.  Whisk in the olive oil.
